Spanakopita with Feta

2 packages of MT VIKOS Feta Cheese, crumbled

10 ounces frozen chopped spinach (thawed, drained and squeezed dry)

½ cup olive oil

2 large white onions, chopped

2 tbsp. fresh dill, chopped

1 package phyllo dough

2 tbsp. all-purpose flour

4 eggs, lightly beaten

4 tbsp. melted butter

Preheat oven to 350°F.

Heat oil in a large saucepan over medium heat.

Slowly cook onions until softened, stirring occasionally.

Mix in spinach, dill and flour.

Cook approximately 10 minutes or until most of the moisture has been absorbed.

Remove from heat and mix in feta cheese, eggs, salt and pepper.

Lay phyllo dough flat and brush with butter.

Place a small amount of spinach mixture onto each piece of dough.

Fold phyllo into triangles around the mixture.

Brush with butter.

Bake for 45 minutes to 1 hour, until golden brown.
