Crispy Asparagus Fries with Feta Dipping Sauce

  • All-purpose flour½ cup
  • Cornstarch1 tbsp
  • Chili powder2 tsp
  • Smoked paprika1 tsp
  • Garlic powder1 tsp
  • Onion powder1 tsp
  • Fine sea salt1 tsp
  • Cayenne pepperpinch
  • Eggs2 large
  • Panko bread crumbs1 cup
  • Asparagus, trimmed1 lb
  • Olive oil1 tbsp
  • Buttermilk (for the sauce)½ cup
  • Mt. Vikos Feta½ package
  • Red wine vinegar1 tbsp
  • Olive oil (for the sauce)3 tbsp
  1. Step01

    Preheat oven to 400°F and lightly oil a large baking sheet.

  2. Step02

    In a wide shallow bowl, whisk together flour, cornstarch, chili powder, paprika, garlic and onion powders, salt, and cayenne. Transfer to a plate.

    Beat the eggs in a second shallow bowl and pour panko into a third. Set the three bowls in a row.

    Dredge each asparagus spear in the flour mixture, then egg, then panko, placing on the baking sheet. Drizzle with oil.

    Roast until crispy and browned, 10–15 minutes.

  6. Step06

    For the sauce, blend buttermilk, feta, and red wine vinegar until smooth. With the machine running, slowly pour in the oil and blend until creamy and thick. Season with salt and pepper.

  7. Step07

    Serve the asparagus with the feta dipping sauce.
