Savory Goat Cheese and Olive Sandwich Cookies

- Unsalted butter, softened8 tbsp (1 stick)
- Soft fresh goat cheese4 oz
- Minced fresh rosemary1 tbsp
- Black pepper1 tsp
- Fine sea salt¼ tsp
- All-purpose flour1¼ cups
- Mt. Vikos Kalamata Olive Spread½ cup
- Step01
Beat the butter and goat cheese on medium until smooth. Add rosemary, pepper, and salt and beat to combine. Add the flour and mix on low until the dough comes together.

Transfer the dough to parchment and shape into a 1½-inch log. Wrap tightly and refrigerate until firm, at least 1 hour.
- Step03
Preheat oven to 350°F. Unwrap and cut the log crosswise into ¼-inch rounds.
- Step04
Place on a baking sheet about 1 inch apart and bake until very lightly browned, 15–18 minutes. Cool completely on a rack.
- Step05
Turn half the cookies upside down and spread with a heaping teaspoon of Kalamata olive spread. Top with the remaining cookies and serve. Store leftovers refrigerated in an airtight container.
