Mediterranean Baked Chicken with Feta and Cherry Tomatoes

- Boneless skinless chicken breasts (or thighs)1½ lbs
- Feta brine (from Mt. Vikos Feta in Brine)⅓ cup
- Olive oil2 tbsp
- Dried oregano1 tsp
- Smoked paprika½ tsp
- Garlic, minced3 cloves
- Pepperto taste
- Olive oil (for the sauce)3 tbsp
- Shallot, thinly sliced1
- Garlic, sliced4 cloves
- Dry white wine (or chicken broth)⅓ cup
- Chicken broth¼ cup
- Lemon, juiced1
- Mt. Vikos Feta in Brine, drained and crumbled7 oz
- Sundried tomatoes1 cup
- Honey1 tsp
- Fresh basilfor garnish

Marinate the chicken: combine chicken with feta brine, olive oil, oregano, paprika, garlic, and pepper. Marinate at least 30 minutes (up to 4 hours). No salt needed — the brine provides plenty.

Preheat oven to 400°F. Remove chicken from marinade, pat slightly dry, and discard the marinade.

Heat 2 tbsp olive oil in an oven-safe skillet over medium-high. Cook the chicken until golden, 3–4 minutes per side, then set aside.

Add the remaining 1 tbsp oil with the shallot and garlic; sauté 1–2 minutes. Deglaze with white wine, scraping up browned bits, and reduce by half.

Add the chicken broth and lemon juice. Scatter crumbled feta around the pan, then add sundried tomatoes and honey.
- Step06
Nestle the chicken back in, spooning sauce over top. Bake uncovered 18–20 minutes until the chicken reaches 165°F.

Rest 5 minutes, then garnish with fresh basil and the reserved crumbled feta.
