  • Ground lamb or beef (or a mix)1½ lbs
  • Yellow onion, finely diced1 large
  • Garlic, minced4 cloves
  • Crushed tomatoes1 can (14 oz)
  • Dry red wine½ cup
  • Ground cinnamon1 tsp
  • Ground allspice½ tsp
  • Ground nutmeg½ tsp
  • Extra virgin olive oil3 tbsp
  • Salt and black pepperto taste
  • Unsalted butter4 tbsp
  • All-purpose flour⅓ cup
  • Whole milk, warmed2½ cups
  • Eggs, beaten2 large
  • Grated kefalotyri or parmesan½ cup
  • Ground nutmeg (for béchamel)⅓ tsp
  1. Step01

    Preheat oven to 375°F and grease a 9x13 baking dish. Spread half the eggplant spread (about 7 tbsp) evenly across the bottom — this is your eggplant base, no roasting required.

    Heat olive oil in a large skillet over medium-high. Cook the onion 4 minutes until softened, add garlic for 1 minute, then brown the meat thoroughly, about 8 minutes. Drain excess fat.

    Add the red wine and reduce by half, about 2 minutes. Stir in crushed tomatoes, the remaining eggplant spread, cinnamon, allspice, and nutmeg. Season and simmer on low 15 minutes until thick.

    Make the béchamel: melt butter in a saucepan, whisk in flour and cook 1 minute. Gradually whisk in the warm milk until thickened, about 5 minutes. Off heat, stir in nutmeg and half the cheese, cool slightly, then whisk in the beaten eggs.

    Spoon the meat sauce over the eggplant layer. Pour the béchamel over the top, spreading to the edges, and scatter with the remaining cheese.

    Bake 45 minutes until deep golden and set. Rest at least 20 minutes before slicing.
